MATERIALS:
1 whole chicken cut into portions
paprika
a little thyme
4 tablespoons oil or butter
1 cup brandy
Some fresh onions
1 clove garlic, finely chopped
250 gr. Mushrooms, whole or cut
100 gr. Small whole onions, peeled
1 cup dry white wine
a little grated nutmeg and thyme
RECIPE:
Wash the pieces of the chicken, put salt and pepper, sprinkle with a little thyme and paprika.
Preheat the oven to 250 degrees.
Place in ovenproof dish or pan the oil and pieces of the chicken in the oven.
Let them get a good color on all sides.
Transfer the chicken pieces on a platter.
Reduce oven to 200 degrees.
Pour cognac into the pan, put the onions, the garlic and the mushrooms.
Let them cook about 10 minutes.
Put the pieces of chicken back in the oven.
Pour the wine and sprinkle with nutmeg and thyme and leave them until cooked.
Serve immediately.
