MATERIALS:
2 tablespoons pine nuts
250 gr. tender arugula
2 avocados
little parmesan
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon fruit-flavored vinegar or balsamic
Salt, Pepper
RECIPE:
- Lightly roasted pine nuts.
- Clean and cut into slices avocados.
- Place the arugula in a bowl.
- Add the avocado and top with pine nuts.
- Mix the olive oil, lemon juice, vinegar, salt and pepper.
- Pour the mixture over salad and serve throwing parmesan on top.
