Ingredients:
4 salmon fillet - without skin,
3 avocadoes,
One cucumber,
400 gr of green salad
For dressing:
Juice from one lime,
Lemon zest - from one lemon,
2 teaspoons of honey,
4 spoons of mint - cut into small pieces,
3 spoons of olive oil - plus some oil for salmon
Directions (20 minutes):
- Mix the ingredients for the dressing
- Cut into halves the avocadoes and then cut them into slices and do the same with the cucumber
- Put the salad on a plate and on top of it put the slices of avocado and cucumber and pour half of the dressing
- Warm a pan and fry the salmon with in a bit of olive oil for about 3-4 minutes on each side, until it becomes crispy, still remaining soft inside
- Put the salmon on top of the plate with salad and pour the rest of the dressing
- Serve it warm!
