Now add diced onions and pepper according to taste. Add shredded cheese on top and roll it in a tortilla. The dish is nutritious, tasty and makes for a great and filling lunch for diabetics.

Tomato Crostini

This is yummy and healthy too! You would require about 4 medium sized tomatoes, ? cup basil leaves, 2 tsp olive oil, ground pepper to taste, peasant bread (1/4 lb), and one clove garlic.

Create a mixture of tomatoes, basil, oil and garlic in a bowl and let it stay covered for about thirty minutes. Serve this mixture with peasant bread in room temperature.

Flavored Bran Yogurt





This is a fabulous diabetic’s health recipe. You would need banana/strawberry, a glass of skimmed milk, half cup of fat free yogurt, 1 tsp vanilla extracts, 1 tsp sugar, and ? bran flakes.

Take banana or strawberry and toss it in a blender with fat free yogurt, skimmed milk, sugar, vanilla extract and bran flakes. Make a smoothie. Mix and pour it in goblets. Now sprinkle a dash of cinnamon. This will make for a wonderful breakfast.
