The Secrets of a Gluten Free Diet

Gluten is a kind of protein that is found in wheat, wheat products, as well as a few other grains. A gluten free diet is usually recommended to those suffering from celiac disease, autism, attention-deficit hyperactivity disorder (ADHD), or are allergic to wheat. Gluten free cereals are generally low on fiber and Vitamin B.

You should not be misled by products claiming to be wheat-free. Grains such as triticale and kamut undoubtedly belong to the wheat family. Therefore, you should buy certified gluten free products only.

Why a Gluten Free Diet?





Some people are known to suffer from severe injuries to the walls of their small intestine in case it comes in contact with anything that contains gluten. This is termed as celiac disease or non-tropical spruce or gluten sensitive enteropathy.

It may result in gas, bloating, diarrhea, abdominal cramps and even weight loss. These people might also suffer from mineral and vitamin deficiencies. The affected lining of their small intestine heals if they can avoid gluten, by completely eliminating it from their diet.

What is allowed and what is not?


The following grains must be avoided while on a gluten free diet – wheat, barley, rye, malt, durum, couscous, commercial oats, spelt, bulgar, kamut, farina, einkorn, semolina, and farro.

Grains that are allowed while on a gluten free diet are – potato, corn, rice, buckwheat, yam, quinoa, pure and uncontaminated oats, tapioca, teff, arrowroot flour, gelatin, guar gum, amaranth, sorghum.

The Most Difficult Challenge


As nothing comes close enough to replacing wheat flour, baking happens to a huge challenge in gluten free kitchens. According to Dr, Carol Fenster, you can mix one and a half cup of potato starch, one cup of tapioca flour and one and a half cup of sorghum flour while baking instead of using wheat flour.
What should you use?

While preparing gluten free meal you can use

* Cereal products or flour made from corn flour, soy flour, potato flour or rice flour
* Carob beam gum, locust bean gum, gum Arabic or cellulose gum
* Soy sauce solids or soy sauce
* Modified food starch or modified starch made from potato, corn, maize or arrowroot
* Malt flavoring or malt that has been derived from corn
You should not use anything that contains
* Emulsifiers
* Flavoring
* Starch
* Stabilizers
* Hydrolyzed Plant Protein

Going on a Gluten Free Diet

Although it sounds like nothing palatable would be left on your plate if you start on a gluten free diet, you do have a few items to save you the trouble of fasting instead. You can feast heartily on fruits and vegetables! However, you might have to forego the fancy sauces while cooking.

There is another diet, which works really well with a gluten free diet is called the acai diet. Acai is actually a berry growing in the rainforests of Brazil and one that has been improving the health of the native people for a great many years.

This berry is known to contain scores of anti-oxidant properties. It also increases the metabolic rate in one’s body, thereby dramatically increasing the speed at which the calories burn.
